Homemade Festive Bakes Recipe

Everyone is always excited when a certain North-East Bakery starts selling the Festive Bakes. It is the new signal for the start of Christmas. 

This year I decided to make my own to see if I can make one just as good. I've used a few short cuts and this has made them super easy to make. This recipe will make 6 large bakes or 12 small bakes.


Ingredients:

500g diced turkey breast

200g smoked bacon lardons

1 pack of sage and onion stuffing

1 jar of cranberry sauce

3 packs of ready to roll puff pastry

1 tub of turkey gravy granules


Method:


Prepare the stuffing according to the packet and leave it to cool. Next heat a little oil in a hot frying pan and fry the bacon lardons until crispy then set aside. In the same pan fry the turkey until cooked through (I cut the diced turkey into smaller chunks as you don't want the filling too big).

Cut the cooled stuffing into small cubes around the same size as the bacon.  Prepare the gravy as per the instructions and mix together with the turkey, bacon and stuffing and a big spoonful of cranberry sauce, this is your filling.

Roll out your pastry sheet and cut into four or eight depending on how many bakes you are making, spoon as much of the filling as you want, don't over fill them as they can burst in the oven if too full. Add a few small spoonfuls of Cranberry sauce and place the top layer of pastry on and seal it with some egg wash. Repeat this for all of the bakes.

Brush with egg wash and and prick a couple of holes in the top with a knife to allow steam to escape. Bake in a preheated oven at 200℃ for 20 minutes if they aren't golden enough brush with another layer of egg wash and back in the oven for a further 5-10 minutes (keep checking). Leave to cool before eating as the filling will be super hot.
