I am all about the comfort food right now and as I have plenty of time on my hands, I have really been getting into batch cooking.


How To Batch Cook Mac n Cheese For Your Freezer



Mac n Cheese is a real crowd-pleaser in our house so I thought I would share my recipe to prepare in advance and pop in your freezer for a later date. Your future self will thank you!

This recipe serves 4, you can easily scale up if you have big enough pans.

Ingredients

250g Macaroni Pasta
40g Butter
40g Plain Flour
600ml Milk (ideally Whole Milk but we use Semi-Skimmed and it works just fine)
250g Grated Cheddar
1 Teaspoon Mustard Powder
1 Teaspoon English Mustard

Extra Grated Cheese / Parmesan / Toppings of your choice to serve (we love Bacon Pieces and leftover Pulled Pork).

If you don't like mustard / prefer something a little blander, it is fine to leave the mustard out. You could also try adding some crushed garlic.

That's a lot of cheese!

Add milk gradually

You should end up with a thick creamy sauce 

Take the pan off the heat and add the grated cheese

Combine with the pasta 




Method 

1 - Cook the pasta as per instructions and set aside.

2 - Melt all of the butter in a large saucepan and add the flour to create a roux. Cook for a few minutes.

3 - Gradually add a little milk at a time, whisking continuously over the heat for approximately 10 minutes until you have a thick sauce.

4 - Add the mustard powder and mustard to taste.

5 - Remove the sauce from the heat and stir in the grated cheese until it has melted.

6 - Add the cooked pasta and stir / combine well.

7 - Pour into one large ovenproof dish / individual dishes and allow to fully cool before covering, labelling and popping in the freezer.

To Serve / Re-Heat 

Your Mac n Cheese is fine in the freezer for a couple of months. You can either thaw overnight in the fridge and cook in the oven for around 30 minutes OR cook straight from frozen for 45 minutes - 1 hour ( which is my preferred method). We usually have the temperature at around 190C.

We cook our Mac n Cheese uncovered and like to sprinkle extra cheese on top before baking (especially parmesan) or add bacon bits or pulled pork.  Delicious!

  1. It looks so good! I'm so lazy though, I love that I can get RedHeads delivered to my door and stashed into my freezer!
