Our week in food - week 3

Saturday - Homemade Fish Pie

This is the first time we have made our own fish pie. It was super easy and a great way to use up potatoes. Make double and freeze a portion for later.

Sunday - Thai beef curry

I love Thai curries. They taste so much better when made yourself. The key ingredients are:-

Coconut milk
Thai green curry paste
Lime juice
Fish sauce
Kaffir lime leaves

Experiment with the above ingredients to find a flavour you are happy with. We used leftover beef brisket which we had previously frozen. It was melt in the mouth delicious.

Monday - slow roasted shoulder of lamb, low fat roasties and green beans

No pic of this meal as I was in too much of a rush to dig in! I cooked the lamb for 8 hours in my slow cooker. It was lovely and tender. I made low fat roasties by par-boiling peeled potatoes for 12 minutes, allowing to cool slightly, spraying with 1 kcal spray and then roasting in the oven for approximately 30 minutes. Almost as good as the real thing!

Tuesday - citrus rubbed salmon salad

I made a quick marinade for our salmon consisting of the following ingredients combined:-

Zest of 1 lemon
Juice of 1 lemon
2 garlic cloves finally chopped

I marinated the salmon for 10 minutes and then popped in the oven at 180C for approximately 25 minutes. I served with a simple side salad with lemon dressing.

Wednesday - discovery chicken fajita

Absolutely delicious, all that was missing was a bottle of Mexican beer (damn you dry January!)

We also baked these gorgeous mini strawberry cheesecakes

Thursday - spaghetti and meatballs

Simple to make and always a winner in our house. Clear plates all round.

Friday - out for family chinese meal

We always try and go out for tea the Friday after pay day. We are trying to save, save, save at the moment for a house move so we enjoyed a cheap and cheerful Chinese buffet (crispy shredded chicken in Cantonese sauce was my favourite)
